Non-Stick Foil

Ingredients

  • For the Quesadillas

  • For the Dipping Sauce

Directions

PREHEAT oven to 400°F. Line rimmed pan with Reynolds Wrap® Non-Stick Foil; set aside.

HEAT olive oil in a medium skillet over medium-high heat and cook peppers 3-5 minutes until softened; stirring frequently. Add garlic and cook 1-2 minutes more. Add salsa and lime juice and cook until liquid is reduced 2-3 minutes. Remove from heat.

CUT tortillas in half and lay 4-6 on a cutting board or clean counter. Add about 2 tablespoons pepper mixture to half of each tortilla. Top with about 1/4 cup cheese. Fold filled half toward center and roll tortilla up tightly in a cone shape. Place on prepared pan with seam down, against edge so that the 'torch' won't unroll. Repeat with next tortilla and place it next to the first in the opposite direction, so the wide end is next to the narrow end. Continue with remaining tortillas, filling, and cheese.

BAKE 8-10 minutes until cheese is melted and tortillas are starting to brown.

Meanwhile, in a small bowl COMBINE all sauce ingredients; mix well.

PLACE sauce in a small ramekin in the center of a round serving platter and carefully arrange quesadillas in a double layer with wide ends facing out. Enjoy!
