PREHEAT oven to 425°F. Line a medium (10x15x1-inch) baking pan with Reynolds Wrap® Heavy Duty Aluminum Foil. Set aside.
PLACE peeled and cut vegetables in a large bowl. ADD olive oil, salt and pepper. TOSS to coat the vegetables.
SPREAD the vegetables in an even layer in the foil-lined baking pan. TOP with fresh thyme and sage.
BAKE 40 to 45 mins, until vegetables are lightly browned on the edges and reach the desired texture. TOSS gently and SERVE.
